Wattle Seed Anzacs  

2 Muttaburrasaurus* mugs of Qualabert IndigiScran Wattle Seed Flour
2 Muttaburrasaurus mugs of wholemeal self-raising flour
250g bush honey e.g. Red Gum or Leatherwood
2/3 Muttaburrasaurus mug of butter (about 125g)
2 dessert spoons of bicarbonate of soda
1/2 Muttaburrasaurus mug of water
1 pinch of salt


Sift together flour and salt. Bring water, honey and butter to the boil in a quart billy. Add the bicarbonate of soda while mixing enthusiastically and immediately stir into the dry ingredients, mixing to a firm paste. Roll into balls and flatten to desired thickness on a greased tray with the bottom of the Muttaburrasaurus mug. If the mixture appears too wetinitially, let it stand to thicken for 10 minutes before forming the biscuits, as the wattle seed flour will absorb quite a lot of water. Bake in the top of a preheated oven at 180'C for 25 minutes, turning at 15 minutes to prevent the bottoms burning. Do not overcook.
These biscuits are very filling and will keep for weeks. Put some in your tuckerbag for an emergency food supply.

* Muttaburrasaurus (q.v.) mug is about 300mL.
